Chicken Biryani Recipe : A symphony of spices, where delight never ends.


Chicken Biryani Recipe

Preparation time 10-15 minutes 

Cooking time 25-30 minutes 

Serve 2-4


Ingredients/ साहित्य

For Chicken Marination

  • 500 Gms Chicken (drumstick) चिकन
  • 1 ½ cup Curd, beaten, फेटलेलं दही
  • 1 ½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट, आलं लसुण पेस्ट
  • 2-3 tsp red chilli powder, लाल मिर्च पाउडर , लाल तिखट
  • 2 tsp Coriander powder, धनिया पाउडर, धने पाउडर
  • ½ tsp Turmeric powder, हल्दी पाउडर, हळद
  • 2 tsp shahi biryani masala, बिर्याणी मसाला
  • 2 Green chillies, less spicy & broken into half, हरी मिर्च, हिरवी मिरची
  • Salt to taste, नमक स्वादअनुसार
  • Coriander, कोथिंबीर
  • ½ squeezed lemon, लिंबाचा रस
  • 1-2 tbsp Oil, तेल


For Cooking Rice

  • Water as required, पानी, पाणी
  • Salt to taste, नमक स्वादअनुसार
  • 1 tsp Ghee, घी, साजूक तूप
  • ½ inch Cinnamon stick, दालचीनी
  • 1 Bay leaf, तेजपत्ता
  • 3-4 black paper, काळी मिरी
  • 1 green and black cardamom, हिरवी आणि मोठी काळी विलायची
  • 2 cups basmati rice (soaked for 30 minutes) बासमती चावल , बासमती तांदूळ


Ingredients For garnish

  • 3 medium Onion, sliced, प्याज
  • 10-12 cashews, काजू
  • Oil for frying, तेल तलने के लिए , तळण्यासाठी तेल
  • Fresh Coriander, कोथिंबीर 


Process / विधी

For Marination

In the bowl, add chicken , curd, ginger garlic paste, salt to taste, coriander powder, red chilli powder, turmeric powder , biryani masala, lemon juice , oil, green chilli and mix everything well. Keep aside until the rice is prepared.

एका भांड्यात चिकन, दही, आले लसूण पेस्ट, चवीनुसार मीठ, धणे पावडर, लाल तिखट, हळद पावडर, बिर्याणी मसाला, लिंबाचा रस, तेल, हिरवी मिरची घालून सर्वकाही चांगले मिसळा. भात तयार होईपर्यंत बाजूला ठेवा.

For Cooking Rice

In a cooker add water, salt to taste, khade masale, ghee and once it’s roaring boiled, add soaked basmati rice. cook for at least 4-5 minutes on high flame. Strain the 60% cooked rice and transfer it into a tray for resting. Keep it aside for further use.

एका कुकरमध्ये पाणी, चवीनुसार मीठ, खडे मसाले, तूप घाला आणि ते उकळले की भिजवलेले बासमती तांदूळ घाला. कमीत कमी ४-५ मिनिटे मोठ्या आचेवर शिजवा. ६०% शिजवलेले तांदूळ गाळून घ्या आणि ते एका ट्रेमध्ये विश्रांतीसाठी ठेवा. पुढील वापरासाठी बाजूला ठेवा.

For Fried Onion and cashews

In a kadhai, add oil, once it’s hot, add onions in small batches and fry until golden brown in colour. Likewise fry cashews and keep it aside for further use.

कढईत तेल घाला, ते गरम झाल्यावर, कांदे घाला आणि सोनेरी तपकिरी रंग येईपर्यंत परतून घ्या. तसेच काजू तळून घ्या आणि पुढील वापरासाठी बाजूला ठेवा.

For Layering

In a cooker, add the remaining oil 1 tbsp of ghee and add marinated chicken, some fried onions and fresh chopped coriander then add layer of cooked rice.

एका कुकरमध्ये उरलेले तेल, १ टेबलस्पून तूप घाला आणि त्यात मॅरीनेट केलेले चिकन, काही तळलेले कांदे आणि ताजी चिरलेली कोथिंबीर घाला आणि नंतर शिजवलेल्या भाताचा थर घाला.

Add the 2nd batch of cooked rice mixed with some left over marinate and layer it nicely. Again add some fried onions , coriander cashews and ghee on top of it.

Cover it with the lid and allow to cook for 20-25 minutes or 1-2 whistles on low flame.

शिजवलेल्या बाकीच्या भातामधे उरलेला थोडासा मॅरीनेट मिसळा आणि त्याचा थर लावा. त्यावर पुन्हा तळलेले कांदे,कोथिंबीर , काजू आणि तूप घाला. कुकर च झाकण लावा आणि २०-२५ मिनिटे किंवा मंद आचेवर १-२ शिट्ट्या घ्या.

Once chicken and rice gets cooked well, turn off the flame and keep it aside for resting for 10-12 minutes. Serve it on a serving plate and garnish it with coriander. Serve hot.

चिकन आणि भात चांगले शिजले की, गॅस बंद करा आणि १०-१२ मिनिटे बाजूला ठेवा. सर्विंग प्लेटमध्ये सर्व्ह करा आणि कोथिंबीरने सजवा. गरमच सर्व्ह करा.

PAV BHAJI RECIPE / पाव भाजी बनविण्याची कृती 

Serve - 4 people 


Ingredients / साहित्य 

🔹For Bhaji /भाजी साठी 

  • 3-4 medium Potato, cubed, आलू , बटाटा 
  • 1 Capsicum, roughly chopped, शिमला मिर्च , ढोबळी मिरची 
  • 1 cup Frozen Green peas, हरी मटर , हिरवे वाटाने 
  • Water, पानी    
  • Salt to taste, नमक स्वादानुसार , मीठ चवी नुसार 


🔹For Tempering ( भाजी फोडणी साठी चे साहित्य )

  • ¼ cup Oil, तेल 
  • 2-3 Green chilli, chopped, हरी मिर्च , हिरवी मिरची 
  • 3-4 medium Onion, chopped, प्याज , बारीक चिरलेला कांदा 
  • 1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट  , आलं लसूण ची पेस्ट 
  • 4-5 tsp red chilli powder, देगी लाल मिर्च पाउडर , लाल मिरची पाउडर 
  • 1/2 tsp Turmeric powder, हल्दी, हळद 
  • 3-4 tsp coriander powder, धनिया पाउडर, धणे पूड 
  • Salt to taste, नमक स्वादानुसार , मीठ चवी नुसार 
  • ( Quantity of all the given spices can be changed as per the taste/ मसाल्यांचा प्रमाण चवी नुसार घेऊ शकता) 
  • 2 medium Tomato, chopped, टमाटर , बारीक चिरलेला टोमेटो 
  • 1 tbsp pav bhaji masala, पाव भाजी मसाला 
  • Boiled & mashed vegetables, उबली सब्जियाँ , उकडलेल्या भाज्या 
  • Water, पानी   
  • ¼ tsp Sugar,  चीनी  , चिमूट भर साखर 
  • ¼ tsp kasuri methi,  चिमूट भर कसुरी मेथी 
  • 1 tbsp Butter, मक्खन 
  • 1 tbsp Coriander leaves, chopped, धनिया पत्ता 


🔹For Toasting Pav 

  • 1 tbsp Butter, मक्खन  
  • Ladi pav, लादी  पाव 


🔹For Garnish 

  • Onion, chopped, प्याज   
  • Lemon wedge, नींबू की फांक
  • Butter pav, बटर पाव 
  • Coriander sprig, धनिया पत्ता 


🔹Process 

For Bhaji 

In a pressure cooker add potato, capsicum, green peas ,water, salt, then cover and cook until soft. Now mash everything properly with a masher and set aside. 

भाजी साठी प्रेशर कुकरमध्ये बटाटा, सिमला मिरची, मटार, पाणी, मीठ घालून झाकण ठेवून मऊ होईपर्यंत शिजवा. आता मॅशरने सर्वकाही व्यवस्थित मॅश करा आणि बाजूला ठेवा.


🔹For Tempering 

In a large pot add oil , green chillies then add onion & ginger garlic paste and saute until translucent.  Now, add red chilli powder, turmeric powder, coriander powder , salt to taste, pavbhaji masala , pinch of sugar and saute for a minute. Now add tomatoes and saute until they are soft. Now,  add boiled & mashed vegetables, butter, little more pavbhaji masala, water, crushed kasuri methi and continue cooking. Finish the pavbhaji with fresh coriander leaves and switch off the flames. Serve hot with toasted pav, onion, lemon wedges, coriander leaves.

एका मोठ्या भांड्यात तेल, हिरवी मिरची घालून नंतर कांदा आणि आले लसूण पेस्ट घाला आणि पारदर्शक होईपर्यंत परता. आता त्यात तिखट, हळद, धनेपूड, चवीनुसार मीठ, पावभाजी मसाला, चिमूटभर साखर घालून एक मिनिट परतून घ्या. आता टोमॅटो घालून मऊ होईपर्यंत परतावे. आता त्यात उकडलेल्या आणि मॅश केलेल्या भाज्या, लोणी, आणखी थोडा पावभाजी मसाला, पाणी, कसुरी मेथी घाला आणि शिजवा. ताजी कोथिंबीर घालून गॅस बंद करा. भाजलेले पाव, कांदा, लिंबू, कोथिंबीर घालून गरमागरम सर्व्ह करा.


🔹For Toasting Pav 

In a hot pan add butter and coat the pav in that inside out and toast it properly. 

पाव शेकण्यासाठी गरम तव्यावर लोणी घाला आणि पाव आतून कोट करा आणि व्यवस्थित शेकून घ्या .


With this ready Bhaji, you can make Masala Pav - 

In a hot pan add butter, prepared bhaji then coat the pav inside out properly and then toast it. Add butter while serving 

या तयार भाजी सोबत तुम्ही मसाला पाव बनवू शकता - गरम तव्यावर लोणी, तयार केलेली भाजी घालून पाव आतून व्यवस्थित कोट करा आणि नंतर टोस्ट करा. सर्व्ह करताना बटर घाला.
